Black-eyed pea
Black-eyed peas (Vigna unguiculata subsp. unguiculata) are a type of legume that is native to
Africa. They are also known as cowpeas, black-eyed beans, or southern peas. Black-eyed peas
are a good source of protein, fiber, and vitamins A, C, and K.
Black-eyed peas are a relatively small bean, about 1/4 to 1/2 inch in diameter. They are
typically white with a black spot on one end, but they can also be solid black, brown, or
yellow. Black-eyed peas have a mild, nutty flavor and a slightly chewy texture.
